| Vanuatu is an island archipelago consisting of approximately 82 relatively small, geologically newer islands of volcanic origin (65 of them inhabited), with about 800 miles (1,300 km) north to south distance between the outermost islands.

Lap lap is a traditional island food made from either Manioc, Yam, Banana or Taro. It is grated up then mixed with coconut milk and wrapped in laplap leaf (similar to banana leaf) then cooked in a ground oven (under hot volcanic rocks). Sometimes it is topped with meat, chicken, seafood or coconut cream. I lived in Vanuatu for 3 years and this was one of my favourite foods! If you get a chance, definitely try it. |
